Classic Birthday Buttercream (Bubble Gum Version Included)
For her birthday this year, my granddaughter asked for bubblegum buttercream cupcakes.
This buttercream is the base of it all. Light, fluffy, perfectly pipeable, and stable enough for swirls, rosettes, and all the birthday sparkle you can imagine. It tastes like childhood parties and pink frosting smiles.
And if she keeps asking, Nanny will keep making them.
There is something about granddaughters that softens everything. They don’t just ask for cupcakes. They ask with sparkle in their eyes and absolute confidence that Nanny will make the world pink if needed. And somehow, we do.
She lights up my life in ways that are hard to describe. The laughter. The tiny hands in the kitchen. The very serious conversations that all becomes part of the story. Part of the memory.
Every year she asks for her bubble gum buttercream cupcakes, and every year I say yes. Not because it’s just frosting, but because one day she’ll remember that Nanny always made the pink ones.
Granddaughters have a way of turning ordinary days into celebrations. And if I get to be part of her birthday traditions, I consider myself incredibly lucky.
This classic buttercream is light, fluffy, and perfectly pipeable. It’s my go-to frosting for birthday cakes and cupcakes, including my granddaughter’s favorite bubble gum buttercream. Easy to make, stable for decorating, and freezer-friendly.
Ingredients
678g unsalted butter, room temperature (6 sticks / 1½ blocks)
Room temperature butter is the key to fluffy buttercream. Have everything measured and ready before you start. Buttercream moves quickly once mixing begins.
Cream the Butter

Using a stand mixer fitted with a whisk or paddle attachment, beat the butter on medium-high for 5 minutes until pale and fluffy. Scrape the bowl occasionally.
Add Flavorings

Reduce speed to low. Add vanilla, salt, and any flavoring or coloring. Mix until blended
Add Sugar Gradually

Add icing sugar ½ cup at a time, mixing on low until just combined after each addition.
Whip Until Fluffy

Once all sugar is added, increase speed to medium-high and beat for 3–5 minutes until light and fluffy.
Final Smoothing

Reduce speed to low and mix another few minutes to smooth the texture.

For extra smooth buttercream when frosting cakes, mix on the lowest speed for 2–3 minutes at the end to remove excess air bubbles.

Note
This recipe makes enough buttercream to generously frost approximately 36 cupcakes or one 8-inch, 3-layer cake.
Be sure your butter is truly room temperature before whipping. Cold butter will not aerate properly and can cause a dense frosting.
If your buttercream looks too thick, add heavy cream 1 tablespoon at a time until desired consistency is reached.
If it looks too soft, add a small amount of sifted icing sugar until stable.
For ultra-smooth cake frosting, mix on the lowest speed for a few minutes at the end to remove excess air bubbles.
