Some days I enter the kitchen ready to create culinary magic. Other days I enter the kitchen hoping food will simply appear if I stare at the counter long enough.
Today’s recipe was born on one of those days.
I did not want to preheat an oven. I did not want to wash a roasting pan. I did not want to pretend I was busy cooking while actually waiting around.
So I tossed potatoes, zucchini, tomatoes, and salmon into my Ninja air fryer, pressed a button, and let my tiny countertop employee take over.
While it worked, I supervised responsibly… from a chair… with tea.
The result is a bright, lemony, garlic herb salmon dinner that looks like effort and tastes like effort… but requires almost none. No chopping marathon. No sink full of dishes. No oven heating the whole house. Just one basket, one button, and dinner that practically cooked itself.
Busy-day approved. Lazy-day approved. Nova Scotia wind-howling-outside approved.
One of the reasons I love recipes like this is because I get to start with truly fresh ingredients. The salmon for this dish came straight from Harbourville Fish Market, just a short drive from home. There is something special about picking up fish that was swimming in the Bay of Fundy not long ago.
Living in the Annapolis Valley means we’re spoiled in the best possible way. Fresh fish from Fundy Bay. Beautiful local vegetables. Farm stands around every corner. It makes cooking feel less like a chore and more like a small daily celebration of where we live.
And when ingredients are this good, the air fryer practically does the rest.

Tender salmon, roasted potatoes, zucchini, and juicy tomatoes cook together in the Ninja air fryer with garlic, herbs, and lemon for a fresh, healthy dinner that looks impressive but takes almost no effort.
Ingredients
4salmon fillets (about 170 g each)
450g potatoes (cut into chunks)
1medium zucchini (sliced into half-moons)
1cup cherry tomatoes
3tbsp olive oil
2cloves garlic cloves (minced)
1tsp sweet paprika
1/2tsp dried thyme
1/2tsp dried rosemary
Salt and freshly cracked black pepper (to taste)
pinch chili flakes (optional)
1 lemon (thinly sliced)
• Fresh parsley or dill (for finishing)
• Lemon wedges (for serving)
Instructions — Ninja Air Fryer Method

Preheat Ninja air fryer to 390°F for 3 minutes.

Toss potatoes with 1 tablespoon olive oil, salt, and pepper.

Note: If potatoes are large, cut into smaller pieces for even cooking. This prevents the common air fryer complaint of crunchy outside and firm inside.

Place potatoes in the air fryer basket and cook 8 minutes, shaking once halfway.

Add zucchini and cherry tomatoes. Drizzle with 1 tablespoon olive oil and toss gently.

Pat salmon dry with paper towel. This helps the herbs cling and improves browning. Place fillets on top of vegetables.

Brush salmon with remaining olive oil. Sprinkle garlic, paprika, thyme, rosemary, salt, and pepper over everything.

Lay lemon slices over salmon.

Air fry 8–12 minutes, until salmon flakes easily and potatoes are tender.

Optional finishes: Top with fresh parsley or dill, a tiny pinch of chili flakes for gentle warmth, and a fresh squeeze of lemon before serving.
