Prepare dry ingredients

  1. In a medium bowl, sift together flour, sugar, baking powder, baking soda, and salt.

Mix wet ingredients

  1. In a separate bowl, whisk milk (or buttermilk), melted butter (or oil), vanilla, and eggs until smooth.

Combine batter

  1. Make a well in the centre of the dry ingredients. Pour in the wet ingredients and stir gently until just combined. The batter will be thick. Do not overmix.

Rest batter

  1. Let batter rest for 5 minutes while heating skillet. This helps create fluffier pancakes.

Cook pancakes

  1. Heat a lightly greased skillet over medium-low heat. Using an ice cream scoop or ¼ cup measure, pour batter onto skillet.
  2. Cook until bubbles form and edges look set, about 2–3 minutes. Flip and cook another 1–2 minutes until golden. 

  3. Repeat with remaining batter.
